Healthy Apricot and coconut balls

On occasion when they are on sales I buy some apricot balls. My kids go crazy for them but unless they are on sale they are pricey and probably have a few extra ingredients my kids could do with out. After wanting a food processor for so long I finally got one for Christmas. After doing some experimenting I have come up with a recipe that my kids say is better then the store bought ones. So here it is and I hope you enjoy it as much as we have.

  • 300g dried apricots
  • 1 cup coconut
  • 1/2 cup oats
  • 1tsp hot water
  1. Place apricots into food processor with hot water, buzz until chopped up as small as possible.
  2. Add coconut and oats to the food processor. Buzz again until mix starts to clump again. If mix is to dry and not holding together add another teaspoon of water. If mix is to wet and sticky add either more coconut or oats.
  3. Roll into preferred size balls and place on a tray or plate. Pop into the fridge for at least 30 minutes. Once set pop into a container in the fridge or in the freezer.

Notes – These will be fine in the fridge for at least a week or you can freeze for up to 3 months. Every type of dried apricot is different so if the mix isn’t clumping together just add either more water or dry ingredients.
